CLEAN EATING CHALLENGE STARTS TOMORROW! On Facebook and Instagram I asked people to join me in a 30 day challenge to 1. Eat Clean, 2. Do mild daily excercise, and 3. Have low alcohol intake…..for 30 days! There was a great number of responses to join in on this easy-to-do plan.
Eat Clean means: NO grains, NO Dairy, No Sugar and NOTHING artificial!
Here is how I will help: I will dedicate this blog to encouragement of your success. If you follow it and stick with it, you should be able to not only lose 10-15 pounds in 30 days, but you will feel better, have more energy and maybe see some improvement in your skin and hair, too! This is an easy and healthy way to live with lots of delicious food choices. I will post recipes or links to them to keep things interesting plus links to other sites with more info and recipes! To prepare, do the following:
- Clean your pantry and refrigerator of anything that has grains, dairy, refined sugar or articial ingredients.
- Prepare veggies for the week…have carrots, celery, cucumbers, cherry tomatoes, etc on hand, washed and chopped for snacks and salads.
- Make a dozen hard boiled eggs to have ready for the week.
- Make a weeks worth of menus TODAY! Stick to it as much as possible, but they should be flexible in case there are changes to your schedule!
- Choose a physical activity to get you motivated. Walking, planks, weights, yoga, pilates, personal trainers….whatever you have time for, just DO IT!
- WATER! WATER! WATER! Drink lots of fresh water every day!
Here is a printable weekly meal planner. It is very simple to read. Download it and make copies. When planning your meals, make your grocery list, too!

I know, I know, I know! Another pumpkin recipe, but, hey! It’s Fall! Pumkins are everywhere! Thanksgiving is around the corner! Let’s continue to celebrate the seasons! And this season of Autumn is full of spicy, pumpkin treats! These Spicy Paleo Pumpkin Muffins are just right for breakfast or snacks, and lunch boxes!
This recipe was originally for donuts, but I did not have a donut pan, so I used a mini Bundt cake pan. Since then, I have been making them in a standard muffin tin with paper liners. My next time I am going to use a mini tart pan that has all sorts of shapes. These will then be little 1-bite treats, good for after school snacks or watching TV in the evening!Print
Spicy Paleo Pumpkin Muffins
Full of pumpkin pie spice and extra cinnamom, these muffins will dissappear!
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 10-12 muffins
1/2 cup coconut flour
1/2 teaspoon salt
1 teaspoon baking soda
3 tablespoons pumpkin pie spice
2 teaspoons cinnamon
4 eggs (large size is best)
1 cup canned pure pumpkin
1/2 cup raw honey
2 teaspoons vanilla
coconut palm sugar, optional for decorating
Preheat oven to 350
In a medium sized bowl add all ingredients and whisk until smooth.
Line a muffin tin with 10-12 paper liners and spoon the batter into the liners.
Bake for 20 minutes (sprinkle with coconut sugar now if using) then cool for 5 minutes.
Transfer to a rack to cool completely.
