Bottoms Up Salad

I love the cheer, “Bottoms Up!” but in this case it is not a cheer but the name of a salad. Named because I add all the ingredients except the lettuce first, then top it with the lettuce and dressing before tossing!  Simple, beautiful and endlessly versatile!

The picture above is the “bottom of the salad!  It is lots of great flavors and textures, just using wat I had in the refigerator tonight:  Kalamata olives, orange bell pepper, pomegranate seeds, carrots, scallions, radishes, cilantro, hearts of palm, celery leaves and even some salami.  Topped with chopped ice berg lettuce for good crunchiness, a simple oil and vinegar dressing tops it off and then sits for 10 minutes to let the lavors fuse together!

Bottoms Up Salad


The ingredients listed are just the beginning of a wonderful salad!  Go through your veggie drawer and choose a variety of colors, textures and flavors, then add some other fun things like olives, salami, nuts!

1/2 orange bell pepper, sliced or diced

2 carrots, sliced into bite sized pieces

2 hearts of palm sliced into 1/4″ coins

4-5 scallions sliced

3 radishes sliced

1/2 jar pimentos, drained on a paper towel

celery leaves

1/3 cup pitted kalamata olives. halved

3 tablespoons pomegranate seeds

several thin slices salami, chopped

a handful of colantro, chopped

a handful fresh parsley, chopped

1/2 head iceberg lettuce

salad dressing of your choice


Place all the ingredients in a wide salad bowl and toss with the dressing.  Let sit for 10 minutes then serve.
