Here I go again with Instant Pot Adoration!  But, please trust me on this….hard boiled eggs have never been better than with the Instant Pot.  Cooks know that the best eggs to hard boil are older ones.  If you try to peel  very fresh eggs that have been hard boiled, they are a mess and cannot be used for presentation, as in deviled eggs or cobb salads.  These  Instant Pot Hard Boiled Eggs are fantastic because you can literally go from the hen house (or the farmers market, grocer, etc.) to the IP and in 19 minutes you have perfect, peel-able hard boiled eggs. 3 Ingredient Dark Chocolate Covered Cashews Clusters With Sea Salt

Simple, slightly sweet, a little salty with a roasted cashew crunch!  That’s what you get when you make these Dark Chocolate Covered Cashews With Sea Salt.

This would be a lovely treat to make for Mom on Mother’s Day!!  Place them in a pretty box found at craft stores with a nice hand written note!

They take only 10 minutes to toast , plus a little time to cool.  Then it takes just a couple minutes to dunk them in melted 72% cacao chocolate, a quick sprinkle of fine flaked sea salt and about 15 minutes in the fridge until they are ready to serve!  That is it!  If you are like me, you will have all these ingredients on hand……inventory always includes a variety of nuts, stored in the freezer, dark chocolate bars, a variety of salts and parchment paper!  Trader Joe’s has the best prices on nuts in my opinion. My sister sent me the link to this recipe from Epicurious.  I had made a paleo granola before that was fair but not really good.  Well, this recipe from Epicurious is not only really good, but it is DELICIOUS!  In fact, this is akin to a nut brittle in a few ways….it is crunchy (once it is cooled), sweet and a little bit of salt adds to the brittle flavor.  This Paleo Crunchy Granola is so good on its own, but I am going to use shards of it as a dessert garnish along side my Pumpkin Chunky Chocolate Bars tonight.  (Also, for the chunky chocolate, I used 73% cacao with roasted almonds, for an even nutty, crunchier effect!)

This crunchy granola can be crumbled over fresh fruits for a light dessert, too.  For breakfast, some sliced fresh bananas on top of this would be a nice start to the day.  Oh, and by the way, you will not miss the oats!!

I made only a few slight changes in the original.  For one thing, I did not have cardamom so I substituted Chinese 5 spice powder, which added a nice flavor to it.  The other changes were that the original recipe called for some raw nuts and seeds that I could not find.  Instead, I used dry toasted of several varieties and they worked out great.

I just got a new Ninja Blender!  It is so awesome!  I can’t wait to try some recipes with it…like Instant Pot Velvet Tomato Bacon Soup or Asparagus Soup!  But just to test it out today, I made a kind of basic smoothie…well, it was anything BUT basic.  The texture was smooth as silk, not too thick, not too thin and had just a tiny hint of strawberry pulp, which looks so pretty!  I think you will like this New Ninja Paleo Strawberry Banana Smoothie.

If you are new to the “clean” or “paleo” way of eating, this recipe for Paleo Instant Pot Bone Broth is my gift to you.  If you already follow one of these plans and are new to pressure cooking,  my recipe for making bone broth in an Instant Pot is also my gift to you.  For those of you who just love delicious chicken broth no matter what eating habits you have, this is your gift, too. 😉

The first time I made bone broth 2 1/2 years ago, it took 2 days in my slow cooker.  It was delicious. I used it in so many recipes and on cold mornings I would heat a little cup of it and sip it!

I am SERIOUS!  Paleo Instant Pot Lava Cakes was a last minute  dessert for last minute company last night…and was a huge success!  I was the only “clean” eater in the group but EVERYONE raved about this gooey, fudge-y, dark chocolate dessert!  It was so fast, having all the ingredients in stock and literally cooked in 17 minutes (8 for steam to build up and 9 for the actual cooking).  I served the others a small scoop of vanilla ice cream with it, but I enjoyed it just as it was.

Fresh berries or coconut cream would really be wonderful with Paleo Instant Pot Lava Cakes too.  Continue reading

My sister Kathleen is having a party tonight with some girl friends.  One of the gals has a line of “shape wear” and she will bring her samples for everyone to see and try on, then hopefully order.  Kathleen is hosting with some wine and snacks, snacks right from Shutterbug Chef!  This got me to thinking, why not do this for Book Club, Kitchen and Chef parties, travel planning groups, what ever the reason to get the girls together is a good reason to host a Paleo Girls Night In Menu!
