Spicy Paleo Pumpkin Muffins

CLEAN EATING CHALLENGE STARTS TOMORROW!  On Facebook and Instagram I asked people to join me in a 30 day challenge to 1. Eat Clean,  2. Do mild daily excercise, and 3. Have low alcohol intake…..for 30 days!  There was a great number of responses to join in on this easy-to-do plan.

Here is how I will help:  I will dedicate this blog to encouragement of your success.  If you follow it and stick with it, you should be able to not only lose 10-15 pounds in 30 days, but you will feel better, have more energy and maybe see some improvement in your skin and hair, too!  This is an easy and healthy way to live with lots of delicious food choices. I will post recipes or links to them to keep things interesting plus links to other sites with more info and recipes!  Deal?  Deal.

To prepare, do the following:

  1. Clean your pantry and refrigerator of anything that has grains, dairy, refined sugar or articial ingredients.
  2. Prepare veggies for the week…have carrots, celery, cucumbers, cherry tomatoes, etc on hand, washed and chopped for snacks and salads.
  3. Make a dozen hard boiled eggs to have ready for the week.
  4. Make a weeks worth of menus TODAY!  Stck to it as much as possible, but they should be flexible in case there are changes to your schedule!
  5. Choose a physical activity to get you motivated.  Walking, planks, weights, yoga, pilates, personal trainers….whatever you have time for, just DO IT!

This is a repost from November 2016.  The reason I am bringing it up again is that I recently had scallops in Chicago at a wonderful place call The Girl and The Goat.  They were really good.  It reminded me how simple they are to prepare and so delicious.   Give these seared scallops a try at your house!

Don’t think of this as a fancy dish!  It can be lunch, dinner on a random week night or serve it for company!  Scallops are pricey, it is true….BUT…I just served 4 people each 3 big salt crusted iron skillet scallops with mushrooms and spinach for under $20!!  The scallops were $16.89!  Add a roasted carrot to the plate and you are ready to eat!

Weekend Special iPhone POTD Project Part 3

I hope you have been following my iPhone Photo of The Day Project!  It has been split up into smaller pieces so as to not be overwhelming!  This is the third installment of this project.  The purpose of this project is for me to have a broader vision.  For example, a photograph of a geranium plant with lots of blossoms is always pretty.  But a shot of a single bloom with a blurred background isolates the flower itself and allows the viewer to focus on the subject:  the single blossom.

Paleo Applesauce With St-Germain Liqueur

Autumn is in the air, even in Phoenix!  And with Autumn comes comfort food season: Soups, stews, braised foods, chili, butternut squash, apple everything!  And now there is Paleo Applesauce With St-Germain Liqueur

So with a yummy pork dish the other evening my husband requested applesauce.  I found this terrific recipe that worked so well, I just had to share it with you!  But before I prepared it,  I made a couple of changes to make it paleo-friendly.   Instead of the Calvados called for in the original recipe I used St-Germain liqueur.  It was lovely with a floral hint!

If you are unfamiliar with St-Germain liqueur, it is made from the elder flower petals that grow in France. See the bottle below! The first time I had this wonderful, floral liqueur was at a restaurant called Buccans in Palm Beach, Florida.  It was a signature cocktail that sounded so good I just had to try it.  Simple and elegant, it was nothing more that a glass of champagne with St-Germain floated on top.  The floral scent was divine and was so good with the champagne.  Of course this would be good with any sparkling wine, too.  As soon as I got home from this trip I bought a bottle of this delicious St-Germain!  Love it! These Paleo Decadent Chocolate Pecan Cookies only TASTE decadent.  In fact they are rather light in texture. They are gluten-free, processed sugar-free, dairy free and have no artificial ingredients.  Don’t be fooled by the lack of white sugar, butter and wheat flour! Chewy and fudgy, my Paleo Decadent Chocolate Pecan Cookies are sweetened with coconut sugar, use almond flour as a binder, have 2 kinds of chocolate,  ghee instead of butter, a couple eggs and pecan pieces to make these the best rich chocolate cookies anywhere!
