I saw this recipe on America’s Test Kitchen and decided to “clean” it up by using coconut sugar in place of white sugar. Plus, the original recipe called for 3 cups of strawberries and 3 pounds of sugar! :0 That’s a lot of jam! So cutting it down yileds about 1 cup, which is plenty!
And, you didn’t hear this from me, but this is delicious spread on real home made bread! I made my unclean bread recipe for some friends this weekend and was it ever a big hit with this Classic Strawberry Jam Paleo Style!
This jam is VERY thick and has such a nice strawberry taste. Be sure to use ripe, dark red strawberries!Print
Classic Strawberry Jam Paleo Style
Thick and rich strawberry jam!
1 pound ripe strawberries, quartered
1 cup coconut palm sugar
1 tablespoon fresh lemon juice
1/2 granny smith apple, peeled, cored and finely chopped
1. Using a potato masher or a meat mallet, crush strawberries in Dutch oven until fruit is mostly broken down. Stir in coconut sugar, apple, and lemon juice.
2. Bring to boil over medium high heat, stirring to ensure sugar is completely dissolved. Continue to boil mixture, stirring and adjusting heat as needed, until thickened and registering 20 minutes. Remove pot from heat.
3. Let jam cool completely, about 1 1/2 hours. Transfer jam to airtight container and refrigerate until set.
