Easy Fast End Of Summer Gazpacho is wonderful even on coolish evenings.  The last of the tomatoes from local farm stands is the impetus for this recipe.  My husband found the recipe in the Wall Street Journal and we made it that evening!  Most everything is on hand and it comes together in a snap.  Fresh and delicious, this is a KEEPER recipe you can make all year round, even though the farm stand tomatoes are gone after summer!  Luckily a variety of delicious tomatoes are available at most fine grocery stores.

In the recipe article, the WSJ adds home made croutons but I have omitted them. Instead, I garnish with chopped cooked bacon! 😉  I also slightly increased or decreased a few measured ingredients.  Follow my recipe below for an amazing gazpacho!

Easy Fast End Of Summer Gazpacho

Ingredients

2 large ripe juicy tomatoes, cored, or 6 Compari tomatoes, roughly chopped

1 shallot, chopped

1 stalk celery, chopped

1 red or orange bell pepper, chopped

2 cloves garlic, chopped

1 1/2 tablespoons white wine vinegar

1 tablespoon fresh lemon juice

salt and pepper

2 teaspoons Worcestershire sauce

1/4 cup olive oil, plus more for finishing if desired

2 tablespoons chopped fresh basil or cilantro

Chopped cooked bacon for garnish

Instructions

Place all ingredients except basil or cilantro and bacon in a blender and puree.  Serve chilled, garnished with  a drizzle of olive oil, chopped basil or cilantro and a few pieces of chopped bacon.  Omit bacon for vegan or vegetarian eaters.

Notes

This can be a main course served with a salad or can be a nice started and served in small cups!
