This is a new take on one of my favorite soups! Asparagus, fresh or frozen, is the base of this soup, but a few other ingredients not usually found in many Asparagus Soup recipes sets this one off. Some chopped celery and a few small gold potatoes are part of this base along with the normal things you’d expect to find in Asparagus Soup: thyme, onions, chicken stock. Top it all off with a few unusual garnishes for a blast of flavor: cilantro pesto, crisp bacon and arugula micro greens! Did I mention this is paleo friendly?

Instant Pot ABC Soup Asparagus Bacon and Cilantro Soup

1 tablespoon olive oil
1 red onion diced
4 stalks celery, diced
3 big cloves garlic minced
1 pound asparagus spears, chopped but reserving some tips for garnish
3 small gold or yellow potatoes, quartered
2 teaspoons fresh thyme leaves
2 tablespoons fresh basil chopped
1 tablespoon cumin
5 cups chicken stock
1 1/2 teaspoons salt
1 tablespoon pepper
1 cup cilantro chopped
2 pieces cooked crisp bacon
arugula micro greens, optional
Set Instant Pot to saute and when hot, add the olive oil, onion, celery and garlic. Cook for 5 minutes.
Add the asparagus and saute 2 minutes more.
Add the potatoes, herbs, seasonings and stock.
Set the Instant Pot to “Soup” and set the timer to 15 minutes.
Release the steam then taste the soup for seasonings.
Add the cilantro and place the soup into a blender and puree. Serve garnished with asparagus tips, a drizzle of cilantro pesto and maybe a few thyme leaves!
I made this again using arugula micro greens I found at Whole Foods….yum!
