Instant Pot Artichokes!  Yay!!!  Instant Pot Steamed and Grilled Artichokes= the best of both worlds:  Steam in the IP and then char on the grill, inside or out!  🙂

The beauty of this recipe is that the artichokes cook faster in the IP, plus you can prepare them early in the day and finish on the grill later in the day!  These are excellent just as they are, finished with a drizzle of olive oil and a sprinkle of salt…but add a little dip of aioli for a power punch of flavor!

This is a wonderful starter before your meal!


Instant Pot Steamed and Grilled Artichokes

Artichokes are steamed in the Instant Pot then charred on the grill to give them a smoky flavor!

2 whole artichokes, leaves trimmed and top one-inch cut off and fuzzy choke removed with a spoon

Wedge of fresh lemon and its juice

1 cup water

Olive Oil

Flaky Salt

Chopped parsley for garnish, optional

Aioli for Dipping


Trim the tough end of the artichoke stem leaving an inch or more.  Run the lemon wedge over the cut surfaces of the artichoke then squeeze the juice into the Instant Pot.

Pour the 1 cup of water into the IP and place the prepared artichokes, stem side up, on the steamer rack in the Instant Pot and secure the lid.

Set the IP to Manual and the timer to 15 minutes. (If the artichokes are very heavy, cook them for 20-25 minutes, depending on their size.)  Be sure the valve is in the “sealed” position.

When finished steaming, quick release the steam then remove the artichokes with a tongs and set on a plate to cool.

When cooled, slice them in half vertically, brush with olive oil and grill on a hot preheated grill, cut side down, until nicely charred.

Garnish with parsley. Serve with the dipping sauce of your choice.
