Mexican Chicken Bowls, inspired by my love of Mexican-spiced chicken, veggies and rice, is now my go-to dish at home for a fast and easy lunch or dinner, but I CLEANED it up!!  That’s right; CLEAN Mexican Chicken bowls…at home! This dish can be made spicier if you prefer….just use hot chili powder or add some chopped jalapeno to the veggies.

One of the delicious secrets to this is the cauliflower “rice”. It adds a depth of flavor that goes so well with the onions and bell peppers.

Ingredients
  • 1½ lbs boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 1 or 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4-6 garlic cloves, minced
  • 1 yellow onion, peeled and sliced
  • 1 orange bell pepper, cored and sliced
  • 1 cup cilantro, chopped
  • Cauliflower Rice (recipe follows)
Instructions
  1. Cut the chicken into bite sized chunks, about an inch or so.
  2. In a skillet, heat half the olive oil and the juice of 1 lime.
  3. In a small bowl combine the spices and sprinkle over the chicken.
  4. Sautee the chicken in 2 batches until nicely browned, turning the pieces over once. Cover the pan and continue to cook until no longer pink. Remove to a plate.
  5. If necessary add more olive oil and lime juice to the pan and cook the remaining chicken pieces as before. Remove to the plate.
  6. In the same skillet, add the garlic, onion and bell pepper. Cook over low heat until soft. Add the chicken to the vegetables to warm through.
  7. While the onions and peppers cook, prepare the cauliflower rice. To serve, Place a large spoonful of cauliflower rice in a bowl. Top with chicken, onions and peppers and sprinkle with some cilantro.
  8. Additional toppings such as salsa, chopped tomato, sliced scallions, jalapeno, olives, avocado slices, tortilla strips will be delicious in these Mexican Chicken Bowls. If you are not following a Clean Eating plan, you may top these with sour cream and shredded cheddar cheese, if desired!

Cauliflower "Rice"

Ingredients
  • 1 head of cauliflower
  • 1 tablespoon olive oil
  • ½ teaspoon salt
Instructions
  1. With a box grater, a food processor or a sharp knife, grate the cauliflower florets into rice shaped pieces.
  2. In a skillet, heat the olive oil over medium heat and add the cauliflower rice.
  3. Sprinkle with salt, stir and cover.
  4. Cook for 5-7 minutes. Stir again and serve
  5. This recipe can be cut in half but may need the tablespoon of oil to cover the pan.
