One Bowl Paleo Chocolate Chip Cookies

One bowl…no beaters, no mixers either!  Just 1 bowl and one spoon, plus a few measuring utensils and that is it!  These are different than my Chocolate Chunk Cookies.  They are faster to mix together and I used a wonderful special ingredient this time:  Sunflower Seed Butter!

This recipe came to me through The 30 Clean.  It is a cookie allowed on their clean eating challenge!  I mad a couple changes to it but it is very similar.

The texture of my One Bowl Paleo Chocolate Chip Cookies is fantastic…kind of light, yet holds together beautifully.  The yummy melted dark chocolate combined with that tiny sprinkle of sea salt will delight kids of all ages!

One Bowl Paleo Chocolate Chip Cookies

Sweet and salty with nice bites of melty chocolate make this a new family favorite with no guilt!

Ingredients

1/2 cup coconut oil at room temperature

1/2 cup coconut sugar

1/2 cup sunflower seed butter (Or nut butter of your choice-NO PEANUT BUTTER!)

1 large egg

1 teaspoon vanilla

1/2 teaspoon baking soda

1/2 teaspoon salt (plus more for sprinkling on top)

1 1/2 cups superfine almond flour

3.5 ounces 72% chocolate, broken into bits

Instructions

Preheat oven to 350.

Mix all ingredients except chcolate  in a medium bowl with a lasrge spoon till well combined.  Stir in chocolate.

Cover a baking pan with parchement paper and drop doigh by heaping teaspoons onto pan, leaving an inch or so between them.  Pinch a tiny bit of sea salt on top of each cookie.

Bake for 12-13 minutes until the edges begin to brown.

Slide the parchment and cookies onto a cooling rack and allow to cool to room temperature before enjoying.
