One Bowl Paleo Pecan Coconut and Raisin Cookies are loaded with crunchy pecans, fruity raisins and a hint of coconut! These remind me of oatmeal raisin cookies from my “pre-paleo” eating days. There is a touch of cinnamon for warmth, some honey to sweeten things up, almond flour and 1 egg to hold things together.The ingredients go into just 1 bowl, stirred together then refrigerated for 30 minutes to an hour (or longer if you want), rolled into balls, baked then cooled! These cookies can be enjoyed for breakfast, snack or dessert. They are delicious and healthy!

Form the dough into balls, then a slight flattening with a spatula, and into the oven they go. Fifteen minutes later, they are out of the oven and cooling! Enjoy!
One Bowl Paleo Pecan Coconut and Raisin Cookies
Cookies with crunchy pecans, fruity raisins and a hint of coconut are dairy free, gluten free and processed sugar free! These can be enjoyed for breakfast, snack time or dessert!

3 tablespoons melted coconut oil
1 tablespoon melted ghee
4 tablespoons raw honey
1 1/2 teaspoons vanilla
1 cup raisins
1 1/2 cups super fine almond flour (Available at Trader Joe’s, Costco and other fine stores)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
3/4 cup chopped pecans
3/4 cup unsweetened coconut
Preheat oven to 350.
Place all ingredients in a large bowl and stir to combine well.
Scoop the mixture onto a large sheet of saran wrap, form into a log and roll in the saran wrap.
Refrigerate for 30-60 minutes (or longer if desired).
Form into ping pong sized balls then place on a parchment lined baking sheet. Flatten to about 3/4″ using a spatula.
Bake at 350 for 15 minutes. The cookies may seem under done but they are not!
Slide the parchment sheet and cookies onto a cooling rack and allow to cool.
