After making my Paleo Raspberry Jam the other day, I decided to use a little of it to make Paleo Thumbprint Cookies.  This was a great success.  The base of the cookie dough is made with mixed nut butter from Trader Joe’s. I found the consistency of it a little loose but the flavor is great!!  It was perfect for these cookies.

To make these sturdy enough I used almond flour and went ahead with basic cookie ingredients:  coconut sugar, egg, salt.  You know what I mean, right?

Anyway, I also used a little of the dough to make “peanut butter” type cookies using the mixed nut butter WHICH HAS NO PEANUTS!  They are pretty good too, but the jam really makes these PaleoThumbprint Cookies fruity and slightly sweet.  The nice chewy texture of the baked cookie goes perfectly with the jam!

Paleo Thumbprint Cookies

Ingredients

  • ½ cup mixed nut butter (or nut butter of your choice)
  • 1 ounce ghee (about and 1/8 of a cup)
  • ½ cup coconut sugar
  • 1 large egg
  • 1¼ cups almond flour
  • ½ teaspoon sea salt
  • ½ cup paleo raspberry jam

Instructions

  1. Preheat oven to 350.I
  2. n a stand mixer, blend nut butter, ghee, coconut sugar and egg until smooth then stir in almond flour and salt and mix to form a ball of dough.
  3. Pinch enough dough to make 1 inch balls and place onto a parchment paper lined baking sheet.
  4. Make a small thumbprint in the center of each cookie and add 1/2-1 teaspoon jam into the center of each cookie.
  5. Bake 12 minutes. Allow to cook on the tray before serving.
