Whenever we have leftover chicken, beef or pork, my family likes to make soft tacos or quesadillas with it.  But, alas, as a clean eater, I usually just eat the filling on a plate…like a salad.  But I just found amazing, grain-free cassava and coconut tortillas that are wonderful!  They come from Whole Foods and are  $8.89 for 8!!  Hopefully the price will come down now that Amazon owns Whole Foods!  These are also available on line!

After a weekend of company, we had left over grilled lamb, so I decided that we should give the Siete Cassava and Coconut Tortillas a try.  Am I ever glad we did. ( I oringially went to Whole Foods hoping to get their almond flour tortillas but they were out of them.)  The same family brand, Siete Family, makes both of these as well as some other grain free tortillas.

So here is the deal:  Take leftover protein and chop into bite sized pieces.  Prepare chopped lettuce, tomato, red onion, cilantro and then make a nice garlicky cilantro pesto.  Heat the tortillas in a dry skillet for a couple minutes, assemble and enjoy!!

Ingredients

  • 1 /12 cups cooked chicken, beef, pork, lamb, shrimp or salmon, chopped or sliced
  • 1 package of Siete grain-free tortillas (from Whole Foods)
  • 1/2 head of romaine lettuce, chopped
  • 1/2 red onion thinly sliced
  • 1 pint of cherry tomatoes sliced
    For the Cilantro Pesto:
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 cup cilantro leaves
  • pinch of red pepper (cayenne)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup olive oil

Instructions

  1. Preheat your leftover protein in the microwave to warm through.
  2. Have all your “fixings” in bowls ready for assembly.
    Make Cilantro Pesto:
  3. Mash the garlic and salt to form a paste then add it and all the ingredients to a mini food chopper and process.
    For Assembly:
  4. In a large, dry skillet heat the tortillas on both sides, flipping back and forth until heated through. Place the heated tortillas on a serving plate and layer with lettuce, meat of your choice, red onions and tomatoes then drizzle a little cilantro pesto (a little goes a long way). Roll the tortilla and eat like a taco!
