Sometimes, after a long day or week, do you just feel like eating a simple meal with a nice little salad? One that does not require chopping, dicing and other prepping? But provides good flavor and satisfaction? Well, that is how we felt last night. We threw some pork steaks on the grill, heated a can of barbeque beans (with some of my homemade barbeque sauce I had on hand) and I threw together this wonderful little simple salad: a bed of arugula, micro greens (from Whole Foods), quartered Compari tomatoes, salt, pepper and extra virgin olive oil. That is it.
This is a new take on one of my favorite soups! Asparagus, fresh or frozen, is the base of this soup, but a few other ingredients not usually found in many Asparagus Soup recipes sets this one off. Some chopped celery and a few small gold potatoes are part of this base along with the normal things you’d expect to find in Asparagus Soup: thyme, onions, chicken stock. Top it all off with a few unusual garnishes for a blast of flavor: cilantro pesto, crisp bacon and arugula micro greens! Did I mention this is paleo friendly? Continue reading
Toasted Coconut Almond Fudge Bites
Oh the season of sweets is upon us! Often times I am asked to bring sweets to a dinner or party…and I happily oblige! This time, I am making Toasted Coconut Almond Fudge Bites for MY party! A little get together of my friends always ends on a sweet note! Different than traditional fudge, this one has NO REFINED SUGAR nor DAIRY. For fun, I made the recipe in my little chocolate molds! A while back I posted some recipes using these chocolate molds and decided to give this recipe a try in them! They make perfect little bite sized treats! Paleo Graham Cracker Crumbs
Fourth in a series of seasonal recipes for the holidays!!
On Sunday I watched Giada’s Holiday Handbook. She made some really great Thanksgiving recipes but one that really got my attention was her Chocolate Caramel Crunch Pie. The pie crust was made of graham crackers and butter. The filling was a jar of Dolce de Leche from Trader Joe’s. Of course, being a “clean” eater, I had to research some recipes to try this one out and stay “clean” or paleo. The first order of business was to find a recipe for paleo graham crackers. Success! I found a recipe on a site called Power Hungry. The only change I made was to omit the baking powder (not paleo!) and substitute baking soda and cream of tartar.

Before my desperation for these set in, I was visiting a kitchen shop in Truckee, California. I am ALWAYS visiting kitchen shops wherever my travels take me, but this time I found a cute little silicone chocolate mold I could not resist. The cool thing about it is that the cavities are small…bite-sized small. A pop one in your mouth whole small. The box pictured below is the generic box they use for their molds. This shows star shaped but mine were shaped like itty bitty peanut butter cups.Unfortunately I do not know the name of the store where I bought mine, but I found the same mold on Amazon. It is $6.99 there. This was a good find at at Hobby Lobby for $2.99, plus other shapes, too. We’d better go stock up on these molds!! Continue reading
