This is a new take on one of my favorite soups! Asparagus, fresh or frozen, is the base of this soup, but a few other ingredients not usually found in many Asparagus Soup recipes sets this one off. Some chopped celery and a few small gold potatoes are part of this base along with the normal things you’d expect to find in Asparagus Soup: thyme, onions, chicken stock. Tomato Bacon Bisque
This wonderful recipe was originally poste April 14 of 2015! I am planning to make this for Christmas and serve as soup shots! I thought it is the right time to offer it again, as it is a wonderful comfort food, too….so many places in the US are in the Polar Vortex! Keep warm!
Tomato Bacon Bisque would be better described as smoky bacon and tomato bisque. This soup satisfies on so many levels…it bursts with smoky bacon flavor, freshness from the “on-the-vine” tomatoes, vegetable undertones from carrots, celery and onions. My recent trip to a farm in Plattsburg, Missouri was so much fun in so many ways. Being in the Heartland of America is good for the soul: Beautiful farm scenery, cows, roosters, wind mills and oh those sunsets! But at the end of the day, sitting down with family to share a wonderful meal in a peaceful setting gives immeasurable joy. Today I want to introduce you to my new favorite comfort food: Roasted cauliflower Chowder. My sister-in-law, Kathy, made this and we all loved it! Especially me! Spicy Roasted Yellow Cauliflower Soup is a new twist on my basic recipe from years ago. Ever since the beautifully colored cauliflowers started showing up at farmer’s markets, and now even in grocery stores, I have used them in every way from, raw to roasted, soups and salads. When I saw this yellow (almost orange) cauliflower today, I knew immediately that I wanted to roast it and try it in a soup recipe. I went to my recipe file and decided on one of my basics but I cut out the flour, half and half and added almond milk….delish! Seriously, DELISH! It has a kind of warmth to it, due to the curry but when thinned to a nice consistency it has a soft and velvety texture that lingers so nicely.
Simple and satisfying, this soup is fantastic and great for busy week nights or relaxed weekends!
